The story
The Brew House, Building 20 of the Pabst Brewing Company, housed the brewery’s mashing and boiling operations and was expanded as Pabst became the world’s largest lager brewer in the 1890s. Pabst closed its Milwaukee brewery in 1996 and the complex sat largely vacant until developer Joseph Zilber bought it in 2006. Gorman & Company converted the Brew House and the adjoining 1891 machinery building, keeping the copper brew kettles and a King Gambrinus stained-glass window, and the hotel opened on April 25, 2013. The project won a Historic Restoration Award from the Wisconsin Historical Society in 2014.
