The story
Michael Fink built a new brewery on Superior Street in 1881, and German-trained brewmaster August Fitger soon became a partner; most of the ten-building complex went up between 1886 and 1911, with Chicago brewery architect Louis Lehle designing the 1907 Bottling Works and the Office. Fitger’s survived Prohibition making soft drinks and candy bars but closed on 30 September 1972. A 1983-84 redevelopment turned the complex into shops, restaurants, a museum and an inn, which kept the Office lobby’s vault, grillwork, columns and skylight.
